Savoury Fig Tart
Recently we had a charity bake off in work. Needless to say I am useless at baking and cheated. My favourite of the day was Gar’s lovely Savoury Fig Tart. He set off the fire alarms several times but it was worth it.
Savoury Fig Tart

Ingredients
2 tbsp vegetable oil
butter, to fry
1 tbsp demerera sugar
2 onions, sliced
1 garlic clove, finely chopped
6 x 15cm/6in squares puff pastry
1 tbsp balsamic vinegar
6 figs, quartered
1 tbsp thyme leaves
150g/5oz feta cheese, crumbled
Preparation method
Preheat the oven to 180C/350F/Gas 4.
Heat the oil, butter and sugar in a frying pan over a gentle heat. Fry the onions and garlic for 20 minutes.
Line four small tart tins loosely with the puff pastry. Cover with the onions, balsamic vinegar, figs, thyme and feta cheese
Crimp the pastry at the top and cook in the oven for 15–20 minutes, or until the pastry has risen and become golden-brown.
Serve with green salad and cherry tomatoes.
Instead of making the parcels Gar just rolled out a piece of Filo pastry. You can get them in Aldi pre rolled and the perfect size. Cheap as chips also. He also cut the figs with a scissors because they can be a bit overwhelming in taste. It also spreads them out on the pastry more. Looking forward to making this myself…some day :-)
